Cobbler Crust Ingredients
2 Cups Spelt flour
1 1/2 tablespoon cane sugar
1/2 teaspoon salt
1/2 cup plus 2 tablespoons vegan butter
2 tablespoons vegetable oil
3 tablespoons water, cold
Blue Berry Filling Ingredients
4 Cups Blueberries
1/4 cup cane sugar
1 teaspoon Lemon Zest
1 tablespoon cornstarch
1 tablespoon African Herbswoman Camu Camu Powder
Directions
*Make cobbler crust first
Combine the flour, sugar, and salt in a large bowl
Add the vegan butter mix until crumbly
In a separate bowl whisk together vegetable oil and water
Then add to the flour and sugar mixture, mixing until the dough forms (make sure the flour is incorporated well)
Cover the dough with plastic wrap and chill for 30 minutes
Preheat oven to 350 F
Remove the dough after 30 minutes and roll out onto a lightly floured surface to about 1/4 - inch thickness
Gently press into a pie tin trimming and extra bits along the edges
Add the Blue Berry Cobbler Filling ingredients on to the cobbler crust
layer extra dough on top of the filling
Bake for 30- 35 minutes
To thicken blueberry base let cool in the baking dish for 20 minutes before serving
